Description

Ingredients

  • 1 (20 oz) package cheese tortellini, cooked and cooled
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup kalamata olives, pitted and halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped

For the dressing:

  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  • In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, garlic, oregano, salt, and pepper to make the dressing.
  • In a large mixing bowl, combine cooked tortellini, cherry tomatoes, cucumber, red onion, olives, feta, and parsley.
  • Pour the dressing over the salad and toss gently to combine.
  • Chill in the refrigerator for at least 30 minutes before serving for best flavor.
